In debut of Casa Apicii’s new dinner series - Le Quattro Stagioni (The Four Seasons) Chef Andrew Bosi has prepared a tasting inspired by the winter harvest of the hunters and foragers of Northern and Central Italy. The family-style menu features a Wild Boar Cotechino, Quail alla Griglia, and Chestnut Risotto. Sommelier Juan Gargano has curated a customized Tuscan wine pairing for the evening including Grattamacco Superiore (1998), Brunello di Montalcino Riserva (1999) and Farnito Vin Santo del Chianti (1999).
